Machen's Mom's Shrimp Creole

Last night as Matt, Olivia, Adam and I watched the election we dined on Shrimp Creole. It was really good and seemed to be pretty easy to make. If you get a chance to make it let me know how it turns out! Enjoy!!

Shrimp Creole

1 large onion, chopped
1 bell pepper, chopped
1/2 cup celery, chopped
2 garlic cloves, minced
3 tbs. vegetable oil
1 16-ounce can stewed tomatoes
1 8-ounce can tomato sauce
2 bay leaves
1 teas. Creole seasoning
1/4 teas. ground red pepper
Hot cooked rice

Peel shrimp & set aside.
Sauté onion & next 3 ingredients in oil in skillet until tender. Add bay leaves.
Stir in tomatoes & next 4 ingredients; bring to a boil. Reduce heat; cook, stirring occasionally; 20 minutes.
Add Shrimp; cook 5 minutes or until shrimp turn pink. Remove & discard bay leaves; serve over rice.
